Cookie Dough Protein Oats
A warm, cakey breakfast that keeps you full, focused, and fuelled.
This is my ride-or-die breakfast. On busy teaching days, when I'm moving from one class to the next, this is what carries me through. It's quick, nourishing, and tastes like cookie dough, which satisfies my sweet tooth.
Serves: 1
Time: 5 minutes
Ingredients
¾ cup oat flour (simply blend rolled oats until fine)
1–2 tbsp cacao nibs
¼ tsp baking powder
½ tsp ground cinnamon
1 scoop vanilla protein powder * I love Form Nutrition; shop through this link for a discount
1 serving creatine (optional)
A few drops sugar-free vanilla sweetener, or 1–2 tsp agave
100–150ml water
Method
Add the oat flour, cacao nibs, baking powder, cinnamon, protein powder, and creatine to a microwave-safe bowl. Stir to combine.
Add your sweetener, then pour in the water slowly, mixing as you go. Stop when the batter is smooth, lump-free and thick like cake batter.
Microwave on full power for around 2 minutes, until cooked through and springy to the touch.
Add your toppings and enjoy while warm.
Topping ideas
Coconut yoghurt
Nut butter (or I love PB Fit)
Fresh or defrosted berries (raspberries are my fave)
notes
* I use Form Nutrition’s vanilla protein and creatine. If you'd like to try them, you can shop through my link for a discount.
*Every protein powder absorbs water differently, so add it gradually. You're looking for thick and cakey, not runny.
*Microwaves vary. Check at 90 seconds and add more time in short bursts if needed.
